Creamy Mushroom Risotto

Creamy Mushroom Risotto

Ingredients:

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth, kept warm
  • 1 cup Galiano Pinot Noir
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 pound mixed mushrooms (cremini, shiitake, oyster), sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Mushrooms: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they release their moisture and become golden brown. Season with salt and pepper. Set aside.

  2. Sauté Onion and Garlic: In a large, heavy-bottomed pot, heat the remaining olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and garlic, sauté until softened.

  3. Toast the Rice: Add the Arborio rice to the pot and stir to coat it with the oil and butter. Toast the rice for 1-2 minutes until the edges become translucent.

  4. Deglaze with Pinot Noir: Pour in the Galiano Pinot Noir and stir until most of the wine is absorbed by the rice.

  5. Add Broth: Begin adding the warm broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more. Continue until the rice is creamy and cooked al dente, which should take about 18-20 minutes.

  6. Finish with Mushrooms and Cheese: When the rice is almost cooked, stir in the sautéed mushrooms and grated Parmesan cheese. Cook for an additional 2-3 minutes until the cheese is melted, and the mushrooms are heated through.

  7. Adjust Seasoning and Serve: Taste and adjust the seasoning with salt and black pepper. Stir in the remaining tablespoon of butter for added richness. Garnish with chopped fresh parsley.

  8. Serve Warm: Spoon the creamy mushroom risotto onto plates or into bowls. Optionally, top with extra Parmesan and parsley.
